Quinoa Tabbouleh

Quinoa Tabbouleh

Serves 4-6 (as a side)

1 cup quinoa

2 cups water

½ c chopped fresh mint

½ cup chopped fresh parsley

1 cup diced cucumber, peeled

1 cup halved cherry tomatoes

2 TBL Olive oil (Extra Virgin)

2 garlic cloves, minced

¼ c lemon juice

Sea salt

Black pepper

Cook quinoa according to package directions. Once cooked, transfer to a large bowl to cool. Combine with all remaining ingredients and stir to combine. Season with sea salt & pepper to taste.

This is one of my favorite dishes... So fresh! Yum! Thank you Missy!
